Ingredients

  • Frozen wild-caught salmon (defrosted)
  • 1 tbsp garlic mustard (Trader Joe’s recommended)
  • 3 tsp honey (melted; adjust to taste)
  • 1/2 cup organic extra virgin olive oil
  • Dill weed (to taste)
  • Salt & pepper (to taste)
  • Coconut or avocado oil spray for greasing

Instructions

  1. Defrost the wild salmon in the fridge overnight or soak in cold water for quicker thawing.
  2. Preheat your oven to 425°F (218°C).
  3. In a bowl, mix garlic mustard and honey. Slowly whisk in the olive oil until emulsified. Add dill weed to taste.
  4. Lightly grease a glass baking dish with coconut or avocado oil spray.
  5. Place the defrosted salmon into the dish and generously coat with the honey mustard mixture.
  6. Sprinkle salt and pepper over the top.
  7. Bake for about 15 minutes, or until the salmon flakes easily with a fork.
